Eat: Salsa Chicken

This is one of favorite recipes because it’s both delicious and SO EASY to make.    I have tweaked it a bit since I stumbled upon it a couple of years ago.   You only need 3 ingredients and your crock pot.  It doesn’t get any easier than this!  Plus, you can make it as healthy as you want.


  • 1 16 oz jar of your favorite chunky salsa (mild, medium, or hot – your preference)*
  • 2-3 chicken breasts (use more if you plan to feed more people)
  • 1 packet of chicken taco seasoning*



Set your crock pot to high.

Open the jar of salsa and stir in the chicken taco seasoning to your tasting (I usually use ½ of the packet).   Place the chicken breasts in the crock pot and cover with the salsa mix.

Cook on high for 3-4 hours.   At 3 hours, remove the chicken and shred with two forks.   If chicken is cooked to your liking, then set crock pot to warm until ready to serve.  If not, cook for a while longer until you are satisfied that it’s cooked through.

Serve with shredded cheese, tortillas or taco shells, cilantro or sour cream.  The different combinations you can come up with are endless!

*NOTE:  Since I first made this recipe (picture above), I have replaced the type of salsa I use to Meijer brand chunky salsa and the regular taco seasoning with chicken taco seasoning.   I find this combination to be less salty.
