Eat: Spinach & Bacon Crustless Quiche

So I’m not exactly sure if you’d categorize this recipe as a crustless quiche or a frittata, but whatever you call it, it’s delicious and can be customized to your tastes!


  • 4 large eggs
  • 1 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 – 2 oz feta cheese
  • 4 strips of bacon, cooked and broken into pieces
  • 1 box of frozen spinach, thawed
  • Shredded Mozzarella cheese



Preheat the over to 350-degrees.

Open the box of spinach and drain as much liquid out as possible.  NOTE:  I will actually take time and squeeze the liquid out and then will use paper towels to extract more liquid.

In a bowl, crack open the 4 eggs and mix until the yolks have broken.  Add in the milk and Parmesan cheese and then mix it all together.  Set aside.

In a glass pie dish, spray cooking spray to prevent sticking.   Tear apart the spinach and add to bottom of pie dish.   Crumble bacon on top of spinach, and then add feta cheese to your liking.

Pour egg mixture on top and then sprinkle shredded Mozzarella cheese on top.

Place in over and bake for 45-55 minutes.  Voila!
