Eat: Freezer Meal – Lemon Garlic Chicken

Recipe Wednesday is here!

I love lemon and I love garlic so why not put them together, right?! This is another no nonsense recipe that could be made ahead of time to freeze or thrown together for dinner same-day.  And it’s so tasty that even my kids will eat it with little resistance.

Lemon Garlic Chicken

INGREDIENTS:

  • 1-2 Teaspoons Garlic
  • 1/4 Cup Olive Oil
  • 1 Tablespoon Parsley Flakes
  • 2 Tablespoons Lemon Juice (or the juice of one whole lemon)
  • 4-6 Chicken Breasts (or 8 to 10 Chicken Tenders)

DIRECTIONS:

Thaw overnight. Place chicken and marinade into a baking dish, turn chicken to coat. Bake at 350 degrees for 35 minutes or until chicken is cooked thoroughly.

TO MAKE & EAT LATER:
In a large freezer bag, combine olive oil, parsley, lemon juice, and garlic. Add chicken. Lay bag flat to freeze.
