Eat: Crock Pot Chicken Caccitore

Recipe Wednesday is here!

I’m not going to lie, I always thought chicken cacciatore sounded like a complicated recipe until I tried it.  Sure, there are probably a few of you who can make sauce from scratch; I was not born with that gene.   Maybe someone out there can teach me?
Anyway, this is another super-easy recipe that even my kids will eat!  At the end of the day, that’s all that matters!

Chicken Cacciatore


  • 2 chicken breasts
  • 1 26-ounce jar of chunky vegetable-style spaghetti sauce
  • 1 zucchini, diced
  • 1 cup green pepper, chopped
  • 1 cup onion, chopped

To Make & Eat Later:
Place all ingredients in a freezer bag, lay flat, and freeze up to 3-months.

Place all ingredients in a crock pot, cook on low 6-8 hours.  Serve with spaghetti noodles and grated Parmesan cheese.  Voila!

Looking for a low-carb option? Omit the spaghetti noodles!
