Eat: Easy Weeknight Meatloaf 

I love meatloaf — to be clear, a loaf of hamburger, not the singer.  

And this recipe is SO easy, that I can throw it together in minutes on a weeknight and still have time to spend with my kids before my husband gets home from work!

Ingredients:

  • 1 lb ground beef
  • 1 box stuffing
  • 1 egg
  • 1 cup water

Directions:

Preheat oven to 350-degrees. 

In a bowl, combine stuffing, water, and egg.  Let stuffing moisten for 30 seconds to 1 minute.  You may need to stir it around.

Fold ground beef into stuffing mixture until the two are mixed well.  

Pour mixture into a loaf pan* and bake for 50-55 minutes. 

*I use a Pampered Chef loaf pan so no cooking spray is needed.  If you are using a metal or glass loaf pan, you may need to spray.
