Eat:  Chicken with Vegetables and Potatoes

I feel like a broken record here, but this is yet another easy-peasy weeknight recipe that you can throw together with minimal thought and BOOM – dinner is ready in about an hour.   And what is even better about this recipe is you can tailor it to your tastes!

INGREDIENTS:

  • 1 lb chicken breasts
  • 1 bunch green beans, trimmed*
  • 5-6 medium-size baby red potatoes, diced into 1-inch chunks
  • ½ stick of butter
  • Packet of dry ranch dressing mix*

 

DIRECTIONS:
Preheat the oven to 425-degrees.  Spray a glass baking dish with cooking spray.   Place chicken breasts in the middle of the dish, and then place the beans and potatoes on either side.   Slice butter and place on top of chicken, beans, and potatoes.  Sprinkle dressing mix on top (to you taste).   Cover with foil and bake for 1 hour.

*You can substitute for asparagus and Italian dressing mix for a different flavor.  Play around and see what combination you like!

*Suggestions for other vegetables to substitute include:

  • Zucchini and Summer Squash
  • Carrots
  • Tomatoes
